An easy one for you this week. Nice and simple, easy to follow instructions that is a real crowd pleaser! The combination of horseradish and smoked trout is fabulous.
Serves 4
4 fillets of Belhaven smoked trout
4 handfuls of salad leaves, even some wild herbs would be nice
A good grating of fresh horseradish, or a large tablespoon creamed horseradish from a jar
A trickle of cold-pressed rapeseed oil
Mix the salad leaves with a trickle of oil and add some horseradish. Mix well and place onto a serving dish.
Flake the fish onto the salad and grate more horseradish on top.
Finally, trickle more rapeseed oil on the dish and serve with some crusty bread.
